Right click on the remaining panel and select new panel. The when the new panel appears drag it to where the old panel was. Then right click on the new panel and select add to panel and from the box that appears select what was on the old panel that was deleted.

Not sure if you 'lost' your panel, it might be still there and you just don't see it anymore.
Try the key F11 at least twice when you play this game.

##In case running compiz you can try to deactivate the option 'Legacy Fullscreen Support' in compiz manager, section workarounds.
