On Lucid Lynx I used the command "sudo apt-get install gtali" to install gtali and the dice graphics are certainly present.

There does not appear to be any bugs related to missing dice at https://bugs.launchpad.net/ubuntu/+source/gnome-games

You may want to file a bug describing your problem with the command "ubuntu-bug gnome-games"
