Change the default "mail to"

Using Ubuntu 9.04 and KDE Kontact kmail 1.11.2

How do I change the default mail to form evolution to the mail client in KDE Mail Kontact?

I do not know where the application starts I do see where to change it but it throws me into the file tree to choose an application and I don't know where/what it is.
