You mean to extract it as root?

You can simply run "sudo file-roller" in a terminal. You will then run file-roller as root. Please note that you will be able to access any archive, but if you extract a file like this, it will belong to the root user, so your user will not have all rights on it.

You can also create a launcher with the "gksudo file-roller" command if you want to run it from the taskbar.

In fact you should always use gksudo instead of sudo when running GUI apps as root, even from the terminal.
