How can I change viewed fonts?

Where do I set the fonts that are used in messages bar, viewed mail, calendars,memo etc?

You can change the global fonts under "System" "Preferences" "Appearance" and then go to the fonts tab. I'm not using evolution but I think it's using the global fonts.

If you only want to change evolution fonts, start evolution, edit>preferences>mail preferences tab. From there you can change all you want.

I was looking at changing them in the "Inbox" view the fonts under "messages" the font used to list such things as who send the message is hard for me to read. Also the fonts when I enter text in a calendar item. It is also too small for my taste.

I see what you mean and I don't think you can configure it at all...
Maybe you should try changing screen resolution. I'm currently using 1024X768.
