How do I delete a signature?

I would like to amend my signature but there doesn't seem to be a way I can bring up previous signatures in the "Signature Editor".

Therefore, perhaps it may be better to delete the offending signature and redo from scratch - after all that would be no big deal.

Can someone tell me where the signatures reside, whether they are encrypted or not, and how to SAFELY delete them?

So can you try

Open Evolution
Go to Edit menu, Preferences,
Click on Composer Preferences on left side,
Choose the signatures tab, select the signature and hit the Edit button.
