Can't choose type of fonts on evolution

Hello Happy Ubuntu users,
Continuing to discover Ubuntu, migrating defitively from xp, I'm progressing towards my comprehension of Ubuntu tools.
My question concerns Evolution:
When I write a new pessage using Evolution, I can't change/use/choose other characteristics for my fonts (type, size, TT, A, ...). Buttons don't work. I can see them, but it is impossible to active them.
The answer must be very simple, but I have not find it yet.
I would appreciate to know how to do it.

When you create a new message, you have to select Format -> HTML.

If you want to compose every message using HTML (argh!), you have to choose Edit -> Preferences. A new window appears, choose Composer preferences and select Messages in HTML.

Sorry to ask such questions with so very simple answers ...
However, I thought it was unsecured to use permanent HTML mode. Am I wrong thinking that ?
Does your "argh!" mean it is not a very good idea to use permanent HTML preferences ?

I dislike HTML messages because they are harder to read using console-based mail application and they are heavier than plaintext ones without no valid reason: if you have to write me something, please do it plaintext!

I thank you a lot for your very accurated explanations and time you passed to answer to my beginner questions.

My outgoing font on the compose window are so small??? How can I fix the compose window fonts.

The fonts in Evolution, in the received email... not the composer... are too small and they are a light grey colour. The light grey colour is very hard for me to read. I would like to make the text / font a darker tone. Black would be nice. I would also like to make the font larger. The problem is I don't see anywhere in Evolution nor in Ubuntu in general that allows me to do this. This is definitely a usability issue. I like Evolution but it is too hard to read with that light grey colour. It might work for the younger folks who program the email client, but no for me. :)

Please help me figure out how to set the view preference that would make using Evolution a good experience for me.

Select your received message and then click "Edit as New". This opens the compose window with the incoming text, and you can then alter the text size.
