Evolution preferences; choice of spellcheck language

I have upgraded to Ubuntu 11 and have evolution 2.32.2-0ubuntu7.

In this version the option to choose language in the new email dialog has disappeared. I am getting English (UK) spell-checking, but if I write in French, I want French spell-checking. However, I can't find any way to specify it.

In general there seems now to be no way to change preferences; for example, to alter the address of an email server.

I discovered the way, which is somewhat convoluted.

The application menu has disappeared into Unity's top bar, but doesn't even appear unless you move the cursor into that top bar. From the new message dialog, move into the top bar. Make sure that the new message dialog is adjacent to the top bar and that the cursor doesn't go through any other window on the way to the top bar, otherwise you will get the menu for the wrong window or even the wrong application!

Then Current languages is still available under the Edit sub-menu.

Similarly, the preferences dialog is available from the main evolution window if you move into the top bar.
