Using utopic. When I have ews installed evolution hangs on startup.

If I have evolution installed without EWS I can add an account and then after adding I get the GUI displayed. if I install EWS and configure an account I get no GUI displayed. I can see evolution processes are running but no GUI. remove ews and I get a GUI.

I suggest you report a bug. Utopic is not stable and not ready.
