Is it possible in Evince to convert a pdf file into an odt or doc file and maintain the original formatting including tables and images? If yes, how?

There is an OpenOffice.org extension that might help you (although I've not actually used it myself).

It can be downloaded from http://extensions.services.openoffice.org/project/pdfimport

The pdfimport of openoffice.org import the pdf and generate a openoffice Draw document of the imported pdf so you cannot generate directly a .odt documents of the imported pdf.

More details here: http://extensions.services.openoffice.org/project/pdfimport
