How to place Evince program into "Applications" list?

Given that double-clicking on .PDF files sometimes triggers Evince to open them (which works) and sometimes triggers a "Document Viewer" program (which doesn't work), I like to be able to simply start Evince and then use it to open .PDF-files. And so I like to add the Evince program (or app) to my "Applications" list. But I can't figure out how to add the program to the list. One reason might be that I don know _where_ the program files are kept in Ubuntu. Any tips from anyone?

Go to Ubuntu menu Places->Select a pdf document right click with mouse on it go to Properties
you will get the Properties window
Select the "Open with" tab
Select default Application to be used to Open all pdf files
or push on Add button to Add a new Application to the list then select it

Though not exactly what I was looking for but looks like it will definitely do the job--I'll have to wait until I open under Ubuntu to try it out. Thanks!
