Evince is a reader only. You cannot alter the document very much at all. If the PDF has form fields, you can simply type in the fields, and it will fill them in; however often the PDF I don't think you can directly save the result -- you can however print this to another PDF.

Ack, finishing my incomplete sentence:
however often the PDF may not have fields, even if they are visible on the page -- it depends on the way the document was made.
