All the recent documents are stored in your home directory in a the file .recently-used.xbel (Entries are stored in XML). Locate the entries you don't want appear for the application of your choice and delete the corresponding bookmark nodes in that file.

I just had a look around, all you have to do is go to places on the panel and then recent documents and then clear history.

Note: Not the panel on the eye of gnome program the panel of linux where it says applications places systems
