how to convert jpg files to either word document or pdf file

To make text in a .jpeg editable you need Optical Character Recognition (OCR) software such as ocrfeeder.

To install it, open a terminal window and run the following command:

sudo apt-get install ocrfeeder

Please bare in mind that OCR is not 100% accurate, you may have to correct errors, and the more formatting your document has, the harder it will be.

You can try this free online ocr http://www.online-code.net/ocr.html to convert jpg to text or to searchable pdf document.
