Please double click on the contact whose chat you wish to delete first, when the chat window appears on the top menu select Conversation -> Clear.

Your Done ! You will have to do this one by one for each conversation.

i've just try it and the chat has deleted but when i close and re-open the contact the chat is steel there. if you also go to the contact list window and click on View and then Previous Conversations,
you will see them all there.how can i get rid of them once and for good?ty

Empathy logs all conversations by default it seems, my apologies I also only just found this out.

The logs are under: ~/.local/share/Empathy/logs

To remove the logs just execute: rm -fr ~/.local/share/Empathy/logs

Or use Nautilus, Make sure you click show hidden files, navigate to .local/share/Empathy/logs and you can go through and selectively delete the conversations you want.

Can you help with this problem?
