Encrypted filesystems

If I tell Ubuntu to encrypt my home directory on install, what algorithm does it use, key strength?

Also, why can I not find a very easy way to do a whole disk encryption?

"easy" is a very relative term. You can find dozens of ways of doing it more or less complex just googling. ie:
