Is there a simple way to back up my photo collection onto CD?

You could create an archive (compresses to save space) and then burn the archive to the CD/DVD with Brasero (apps - sound and video) as a data project. Create the archive by selecting the folders you want to backup, right click and choose create archive. Some photo software may include backup options too but I've never used them.
