Ubuntu 20.10 is not supported any more, see https://wiki.ubuntu.com/Releases
You should upgrade to a supported Ubuntu release as soon as practicable.

I installed version 21 but Settings and Pulse still do not recognize my USB DAC as Default Device; even though ALSA recognizes my same USM DAC.

Like I said, this is a well known bug from when Ubuntu 20.04 changed to 20.10. How to set USB DAC as default device in Pulse Audio?

I hope this bug is fixed in future versions of Ubuntu, because I have gone back to Ubuntu 20.04 for USB audio device.
