When you installed, did you choose "Use entire disk" when it asked about the hard drive? If so, it probably gave some sort of error message. We need to know what that error was to help you.

Are you using Wubi (that is, are you running Ubuntu on top of Windows XP)? If so, you should use the real LiveCD, which you may download here:

I guess I can give it another shot this coming weekend, if no one else has
had this problem.

If for some reason it does not override windows you can just move your files and then delete the windows partition with something like g-parted. Then resize or create a new partition after wards.

I've made three copies of Ubuntu so far from different downloads, when I hit on
my computer in ubuntu I can only see the partions it's made, I can't get into Windows to transfer my files. I may need step by step guide. Any Takers?

As Thinboy00 has said if you are using wubi to run ubuntu, the installation is embedded into windows.
So not really installed, it's more or less like a program running in windows. You should use a real live cd.
