How does the releases and updates work for LTS and EMS support

I have a few questions, I love ubuntu it feels great but I am getting lost and confused with release versions and which versions are still being supported, and each version is has certain kernel versions, I currently have noble numbat which feels pretty good I'm just not a fan of the gnome desktop.

Basically I am trying to my own Homelab, I want to be able to have virtual machines that I can deploy easy as well be able to connect to my homelab from outside of my home/local network. I eventually would want to be able to run a server or two but security is important of course.

I do have ubuntu pro as well. Oh and I want to make sure the keys are valid because I on this numbat I was getting signed keys from 2011(not sure if normal) Any clarification on any of these things would be great and even advice would be much welcomed

You are correct about the update keys.
They are the current keys for updating 24.04.
Yes they are secure.
I found what your looking at on software & updates - authentication tab.
