I think all of them are stable, I've personnaly tried Ubuntu and Kubuntu and experienced that Kubuntu is a bit slower than Ubuntu. Xubuntu I've never tried because I'm not a fan of Xfce.

Edubuntu I would not chose, because its made for schools and other learning purposes. So I would say: try them all and see wich one works best for you. It's in the end just a matter of personal taste.

All have the same heart Ubuntu but with different face.

The main different are the Desktop Interface

Ubuntu ->Gnome
Kubuntu -> KDE
Xubuntu -> Xfce
Edubuntu -> Gnome but with educational software

If you are looking for a fast environment I like Xubuntu.
