You can use a grub-gfxboot but I use this

1) Create the image you want display with this requirement

- 600x480
- 14 Colors
- Formt XPM

You can use the GIMP.

2) Put the image in a gzip file

3) Copy the image to /boot/grub

4 ) edit /boot/grub/menu.lst

5 ) Add splashimage= /boot/grub/your_imagen_GRUB.xpm.gz

save and reset
