Ubuntu Desktop 21.10 Minecraft server Screen goes Black and monitor loses signal

The problem I am having is when I setup the Minecraft server following all the instructions on the ubuntu website for Raspberry Pi Tutorial: Host a Minecraft server on Ubuntu Desktop. I can get the server running and join the server from a direct connection from within my own network from a different PC. I am only using the Pi for the Minecraft server have never used it for anything else or anything with the Ubuntu Desktop. However, after starting the Minecraft server my screen (monitor) goes black that is connected to the Raspberry Pi 4 8Gb (running Ubuntu Desktop). I first tried this with Ubuntu Server using an SSH (and a monitor direct connection) the same thing happened so I reflashed the 32Gb microSD card with Ubuntu Desktop and both of them shuts my monitor off & the screen is black although the server is still running.

I blindly was able to type stop and it stopped the server kicked me from Minecraft, but the screen never reappears. The only way I can get the screen to come back on is to unplug the power from the Pi and plug it back in to restart it.

I even tried running the Xmx & Xms with 2048 for both and also tried 4096 for both to see if allowing more memory would help. Please note I do not know linux I had to follow the guide but I also am not an idiot when it comes to this sort of thing I am just not familiar with Linux or the Pi as these are both new to me. I am trying to get this set up for my son and his friends. So if you guys can point me in the right direction to be able to allow them to access the server from outside the network it would be much appreciated.

Have you tried Ubuntu 22.04? It is LTS unlike 21.10
You could also drop back to 20.04 which is rock solid and more mature than 22.04

I haven't tried rolling back not sure how, but I could look that up. I assume I downloaded the newest version that was available because it was the 21.10 version of the desktop.

So far all I have done is downloaded the Ubuntu Desktop & Server (tried both) and did the update & upgrade command for both and did all the rest of the steps to do get the Minecraft server running. The Minecraft server worked and I was able to do a direct connection within my home network and connect to it. The problem was that it lost video signal to the monitor even though the server was still running.
