Do you want to change the kernel that is loaded when you boot the installer iso file, or do you want to change the kernel that is installed during use of the installer for later boots without the installer?

There is a special application for customizing Ubuntu installer iso files, but I do not know whether it works also with the iot iso - https://github.com/PJ-Singh-001/Cubic
