Why are installing the desktop on a server OS? Why don't you just install the desktop OS and skip the extra step....

Under the hood there is no difference between the desktop and server OS. The server OS just doesn't come with a GUI.

If you are using VMWare make sure the hardware level in the VM configuration is up to date and that you have the latest VMWare tools installed.

You should also check the network settings in the VMWare configuration too. I suspect that it's not showing because the default in the server OS is to have the network link as down until you configure it with netplan.

TL:DR - install the desktop OS if you want a desktop OS

Which settings did you choose when configuring VMWare networking?

What is the output of the command

lshw -C network

It's not a bug. The interface is unconfigured so will be set in a down state. If you want a desktop OS then install a desktop OS. Dead simple.
