Not 100% sure, but try:
 sudo apt-get install ubuntu-desktop

If you've done that, try typing

gdm

or

sudo gdm

It might be better to start off with Desktop Edition rather than Server Edition as Server is meant for gateways to really large corporate type networks and as such is not meant to have a desktop running at all. This is partly because of the slight decrease in security that a desktop brings but mostly because a desktop would really just get in the way a lot.

Desktop has a number of Server functionality built in and this can easily be added to. Building up the Gnome desktop from scratch might be a bit more tricky

Good luck and regards from
Tom :)

PS 32bit version is better than 64 bit version because of bigger, better, easier repositories and lower overheads ;)
