Bonjour
J'ai installé Ubuntu 20.04 récemment et Audacity 2.3.3 à partir de Ubuntu sofware.

Il ne propose pas d'autres langues que l'anglais.

recommande de réinstaller l'application en cas de "Missing language choices"

sans succès....

You do not have the Ubuntu-provided version of audacity installed.

How do you see that I don't have the Ubuntu provided version of audacity ?
I took it on Ubuntu software.
How can I have the right version ?

I suggest that you remove (uninstall) the version of audacity that you currently have on your system and then install the Ubuntu-provided version. e.g. with the command

sudo apt install audacity
