date and time display

I wanted a custom date and time in ubuntu 18.4/gnome. It took a long time to find out how.
get the extension clock override from your orange briefcase ubuntu software. install, say you want to set options and click on the gear.
use man date to find the % variables. One is the year in two letters, one is four and so on. so you make a string of text with the % doodads and you can have it like you want. Mine is 2020-01-09 9:55 PM Thu. I did screenshots but find the site does not support them. Getting a log in was a real pain, too. Hoping this will prevent someone else being frustrated with hours of stuff that does not work.
