Exim sending email as alias

We are getting a new server with a different domain name as to that of our website. We want to retain our current email address from our web provider. How can you programme Exim to change the sender address (alias). The new server is running exim as email server. Is this possible? Redirection of emails from our web provider o the new server is no problem its just being able to send with our current address.
