Try to use

alsamixer

- standard all-in-one console mixer application that's easy to use (hit '?' for help). Just mute/unmute relevant channels.
AFAIK some cards (like Intel HD Audio chips) has special switch 'Headphones'.

I had the same problem. I don't think Ubuntu will automatically recognize when you plug in a headset, though I may be wrong. What I did was:

Click on the sound icon in the top right of your screen (probably up there somewhere), then click the "Volume Control" button that appears.

Click on the switches tab, and make sure the headset switch is on.

The sound should now come out of the headset and speakers. If you want to turn the speakers off, open the volume control and mute the "front" speakers (or whatever it is called on your machine).

Leaving the headset switch on all the time does not seem to be a problem. You just have to use the "volume control" dialogue box to mute or unmute the main speakers as needed.

This works with the HDA Intel Alsa mixer. You can select different mixer devices from the top menu through [System] [Preferences] [Sound]
