Thats normal behaviour -- Ubuntu Server has no graphical interface -- it's a server, it has only text-based interface...

Try the normal Desktop Edition, 32bit Ubuntu 8.10 and maybe add some server functions to it when you've played around with it a little. The server edition is a little extreme and meant for quite large networks with dedicated servers doing nothing else but server-only functions - most of which can be done extremely well by the desktop edition. The 32bit desktop version really flies on my 64bit machine and i get the advantages of larger repositories :D

Good luck and welcome in to linux-land. especially the Ubuntu corner. Always good to see a new face :D
