ffmpeg g.711 mulaw 8 bit codec?

I have a .wav file I'm trying to change the format on to the g.711 mulaw standard with a sample rate of 8ksps and sample size of 8. When I enter "ffmpeg -h encoder=pcm_mulaw" "s16" is returned but not "s8". The application is for telephony using a Spectralink VOIP phone in a hospital setting. Any ideas on how to solve this problem?
