setting a default text editor

I'd like to use Kate as my default text editor but System->Preferences->Preferred Applications doesn't seem to be the place to set it. Neither does Applications->System Tools->System Settings->Default Applications.

How do I free myself from "Open With..."

LegoManiac,

Change the default "Open with" program for a file type

      In Nautilus, right click on the file and choose Properties from the menu that appears. The Properties dialog opens.
      Click on the Open With tab. A list of applications appears.
      Select the default application you want for the file type. If the application is not on the list, use the Add button to add the application to the list.

OMG I can't believe I didn't see this. I did actually go looking there at one point. Selective blindness.
