How to disable Netbook Remix interface in Ubuntu eee

I really prefer having Ubuntu eee on my Asus Eee PC 901, but would rather have the traditional menu type interface as in 8.04. Is there a way of disabling the Netbook Remix interface?

The easiest way is to go to preference menu in ume-launcher (the menu that replaces the desktop) and select Session. There disable "UME desktop launcher" and Maximus. Then you have to change the panels.

I've disabled UME desktop launcher and Maximus as suggested and have created new top and bottom panels.

When I minimise applications they appear to fly down towards the bottom panel but don't stay there. How can I get them to stay so I can unminimise again?

Ok, solved this myself with help from other answers.

Right click panel; add to panel; select Window Selector
