You can create a 'persistent' install of ubuntu (that is, changes are saved) on a flash drive by using the software unetbootin :
http://lubi.sourceforge.net/unetbootin.html

You can create a 'live' (non-persistent) install by following these instructions :
http://www.pendrivelinux.com/2008/04/09/usb-ubuntu-804-installation-from-windows/

I don't think you really looked, did you! - at least not on google :
http://www.google.com.au/search?q=ubuntu+USB+live+install

You can use a 1gb minimum flash drive, but you'll have to format it.
