If you download from http://www.zimbra.com/products/desktop_download.html it looks like it's a shell script that you will just run. However, I didn't try so I'm not sure. You should be able to open a terminal and navigate to wherever you downloaded and then type

sh name_of_file.sh

You may need to make it executable first with

chmod +x name_of_file.sh

and it should be self-explanatory from there.
