a peice of advice to ask question here & quickly get answers:
I would have be better if you would have explained your problem in more detail than talking how desperate you to get it fixed.
As i am not sure, if i am correctly able to understand you. Please be specific & clear from Next time

Now your questions:
1) To Choose a Os at start up simple select it via Up & down arrow keys & Press Enter

2) To Change Default Os, You need to edit your "/boot/grub/menu.lst" file. follow the simple steps.

 i) Open terminal(Applications>Accessories) and type sudo cp /boot/grub/menu.lst /boot/grub/menu.lst.backup and press enter
ii) now type, sudo gedit /boot/grub/menu.lst
now you will be presented with a text file, find a option called "Default 0", in starting few lines. and change "0" to number on which your windows os entry comes( usally the last)
eg,
Default 3
