You can boot to live Ubuntu CD / USB desktop then chroot to the installed OS. You can then reinstate GRUB to the MBR.

There are millions of guides online on how to chroot as well as YouTube videos.

The '.../cow' error is usually shown when you omitted one of the commands in the procedure.
