Install Desktop Ubuntu 14.04 along with Win Server 2008 r2

Good day

My friend has Windows Server 2008 r2 installed in a HP Proliant ML 110 G7. It has non-raid single HDD with two partition. We want to install Ubuntu desktop (and not Server version) along with existing Win Server 2008. Can it be done without any issue and will we have a windows option in GRUB menu when system starts?

Resize the NTFS partition and make freed space. You can then boot to the install media and install Ubuntu to the freed space. Obviously be sure you run a final full backup before you start.

Seems a bit weird to want to dual boot a server OS and a desktop OS. Surely the aim of the server OS is to have maximum availability....?
