You can use the Ubuntu CD to setup the partitions using gparted. If you intend to use only Ubuntu then I suggest you wipe all partitions and so a clean install of Ubuntu using all space. You can restore your user data from your backups.

You can't. NTFS is not suitable for Linux file permissions. You can resize the NTFS partition in Ubuntu and install to the freed space. If you have a midrange system you can test Ubuntu on a virtualbox which is a free software.

Before starting any of this you should take a backup if your data is important to you. The fact that you don't have a backup is pretty bad in itself

If you want to get rid of Windows then boot to the Ubuntu CD and delete the partition you are using for your Windows system drive. You can then run the installer and install to the freed space. This will obviously remove Windows entirely so be sure your backups are good.
