UbuntuOne is like an Ubuntu version of the Apple empire's iTunes, so here is a strange place for this question!

Basically (and not surprisingly), iTunes is not released for Linux. You can install WINE (current stable=1.6.1), and use that to install the Windows version of iTunes. (Can you get iTunes version 11.0.4? It got 'bronze'/'silver' compatibility ratings - http://appdb.winehq.org/objectManager.php?sClass=version&iId=28316&iTestingId=79518
Note comments below regarding hacks, and one report suggests "needs GDIplus", IIRC)
As that explains however, the functionality is limited.
So, if you have an old Windows install CD, they suggest you install iTunes in a virtual machine.

Also note you can use RhythmBox and others to sync iPods..
