Try installing iscan and iscan-data

Epson scanners seem to need those 2 packages.

Why do you think that Epson has discontinued scanner driver support?
Just open http://download.ebz.epson.net/dsc/search/01/search/?OSC=LX type V500 into the search box and click on the icon with the magnifying glass, on the page that opens click on the 'Download' button besides "core package&data package".
On the next page accept the license agreement, and finally download iscan_2.29.1-5~usb0.1.ltdl7_amd64.deb or iscan_2.29.1-5~usb0.1.ltdl7_i386.deb (depending on your architecture) and iscan-data_1.23.0-1_all.deb, and install the two packages. See userg_revQ_e.pdf for instructions.

An additional comment: Just installing the two files IDed in your answer, i.e. iscan_2.29.1-5~usb0.1.ltdl7_i386.deb and
iscan-data_1.23.0-1_all.deb did not work. I looked for the plugin file, iscan-plugin-gt-x770_2.1.2-1_i386.deb and installed it. Then my scanner woke up.
