Which GUI is better for Server - Ubuntu-desktop or Kubuntu-desktop?

I am new to Linux, my last Unix experience was on NetApp many years ago. I have been in the Windows world for too long. I have taken the leap and now need to figure out some basics, quick.

I installed kubuntu-desktop, should I have installed ubuntu-desktop?

What does the server do? Ideally LXDE or XFCE would be better as it is lower in resources. Both Gnome and KDE use a lot of resources which you could use for your service.

You choose what you want. Use the GUI that you prefer.

The server will have a lot of functions, with low usage generally. It is our in-house LAMP server for our pre-release website. We will do all functional and limited stress testing against this server.

My challenge, is that I do not have a GUI preference and am installing in hopes of getting the server online faster.

I do not want the server to spend a large amount in resources.

Then I advise you have NO UI. It will reduce security as well as make the server slower as it has to run all the stuff needed for the desktop to exist.
