Codecs are libraries that code or decode information from files to be able to use for other programs,

iPod's use mp4 for audio or videos, you can use GPixPod a nice app to handle your iPod.

For general information: http://en.wikipedia.org/wiki/Codec

If you wish to play media you can open the file in Movie Player and it will figure out what codecs you need.
