You should be more specific. The Ubuntu server installations installs a quite simple system without GUI. What kind of server do you wan't to set up?

There is no whole guide. I would recommend you to buy a book ob linux to get in touch on how linux works. After that try to find informations on the services you want get to work. Books are again a good way to learn.

If I were you I would
Install update-manager-core if it is not already installed:
sudo apt-get install update-manager-core
Edit /etc/update-manager/release-upgrades and set:
Prompt=normal
Launch the upgrade tool:
sudo do-release-upgrade

This will upgrade ubuntu to a newer version. 7.10 will not be updated after about a week from now because its too old.
