According to linuxprinting.org your printer is supported perfectly on linux:
http://www.linuxprinting.org/show_printer.cgi?recnum=Epson-Stylus_Photo_RX640

In Ubuntu you probably need to select the "gutenprint" driver to get it working, the gutenprint driver is the successor of the gimp-print driver.
The gimp-print driver is not included in Ubuntu anymore.

Can you give the output of the following commands to give more information about you current printing setup:
$ grep "*NickName" /etc/cups/ppd/*.ppd
$ lpstat -v
