Can I delete Evolution?
Evolution is like Outlook in Windows. I never used it. I used Outlook Express. I have a palm and want to use jpilot to get a "desktop" environment. I tried using the palm stuff in 6.06 (now using 6.10 and soon 7.04) and it messed up my address book in my palm. Thank goodness Windows is still here, but it's days are numbered. When I get hotsync working in Ubuntu it will be gone.
So can I "safely" Delete evolution from Ubuntu or not?
I note that the "clock" in the upper right is connected to Evolution, will I loose that too?
Or does jpilot need Evolution as well?
Also jpilot is KDE (or something like that) ... will it work in 6.10?

you can safely remove evolution simply by either removing it via the synaptic package manager or running the command
sudo apt-get remove evolution
kde applications will work in ubuntu yes, just like gnome applications work in kubuntu.
jpilot does not seem to depend on evolution at all. either

The clock applet is separate and will remain after removing Evolution.

Perfect. For the moment it is disabled as the default mail handler and last night I upgraded to 7.04.

Yes, you can remove evolution without affecting the clock, there is however an "Evolution Alarm Notifier" that may still continue to run. This is not connected to the clock and can easily be removed.
Go to: System>
Click Evolution Alarm Notifier and then click Remove.
