I want to completely remove evolution mail and instead use thunderbird as the default email client

With Thunderbird installed. (if not from a terminal type "sudo apt-get install mozilla-thunderbird" to install it)
From the menu System -> Preference -> Preferred Applications properties dialog window choose Thunderbird as default mail client.

It may be possible to remove Evolution (and all its dependencies) with aptitude, provided you are running Feisty or later.
