I'd say Lubuntu or Fluxbuntu (uses fluxbox).

You can always install the minimal ISO then install the DE of your choice, keeping tings small is great fun as well as keeps the system fast. Lubuntu is a fantastic choice for an easy install with a very light desktop. If you want super light then puppy is a great choice and can use Ubuntu repos but the ubuntu repo use is quite experimental from what I have heard. It is a 120Mb ISO file as opposed to Lubuntu's 450Mb

Boot to the puppy cd (or any cd for that matter) and create 2 partitions.

Swap partition of 2x RAM amount
The rest for / (formatted ext4 or ext3)

You will need to either use an ubuntu cd using gparted, or you can use fdisk / mk2fs.ext3 etc in puppy itself. Once you setup the partitions (you will need to set the type in fdisk too) and format them then puppy will be installable from within the puppy menu.
