Ubuntu 10.04 Server installation

During the CD installation of Ubuntu Server 10.04 if i select to installa the "Mail Server" then a Postfix installation is started. What can i do if i want to use Exim4 as a Mail Server ? It is better don't installa "Mail Server" during the setup ? Or i can later install Exim4 "over" the Postfix installation ? I don't understand why the setup doesn't allow a choice between Postfix and Exim4.

Did you MD5 test the ISO you downloaded?

The guys at Canonical made the design decision to offer one program for one purpose by default. Alternatives have to be installed separately.
In you case I recommend not to install postfix at first and install Exim manually later.
